Kung Pao chicken
This may not be the 100% authentic recipe of Kung Pau Chicken. Depending on the availability of the ingredients in my kitchen I have prepared this.
Ingredients :
1/2 kg Bone less Chicken diced.
Cooking Wine, Sesame Oil, Soya Sauce, Vinegar (2-3 Table Spoons Each)
1 Big Onion, 1 Capsicum diced
Spring Onion, Garlic, Ginger, Roasted Pea nuts (ground nut)
2 Red Dried chilli, Sesame seeds, Corn starch, Sugar & Salt to taste
Directions :
Make Marinade by combining Cooking Wine, Sesame Oil, Soya Sauce, Vinegar, Corn starch and salt to taste.
Clean chicken pieces and cut them into bite-able size.
Take the 1/2 of the marinade in a mixing bowl and add chicken pieces. cover it with plastic wrap and keep in refrigerator for 20-30 min.
Take a non stick wok. Heat 1 tea spoon of oil. Add finely chopped ginger garlic to it and saute.
Add marinated chicken pieces and cook it for 15-20 min.
After the chicken is done, take it out in a bowl. Saute ginger-garlic and red chilli in the same wok.
Add diced Onion & Capsicum and give a toss. When Orion is slightly done, add the remaining marinade. cook for 2-3 min, and let the sauce thicken a bit.
Add cooked chicken pieces & chopped spring onion, ground nuts, Sesame seeds & toss a bit.
Switch off the flame after 1 min.
Garnish with Sesame seeds & finely chopped spring onion n its ready to serve.
